Salenjaci are a traditional product very popular in Croatia, and one makes them with pork lard. In the past, their preparation was associated with „kolinje“, and today they are a favorite winter cookie and an integral part of holiday tables.
The process of making Salenjaci begins with the preparation of the leavened dough. A block of lard is then placed on the dough and sealed within the dough. Then you need to stretch and fold the dough to create beautiful, flaky layers. The process with a block of pork fat is similar to the process of making puff pastry, except that here instead of butter we use pork fat. It is precisely this type of fat that gives Salenjaci a special crispness and a flaky structure, similar to that of puff pastry, and because of the way it is prepared, this irresistible winter treat is often called a Croatian croissant.
The dough prepared in this way is finally rolled out to a thickness of about 1 cm, cut into smaller pieces and then the filling is placed in the middle of each piece of dough. At Pan-pek, we use famous Podravka plum jam, which is also a traditional product and a favorite flavor of all generations.
