We invest in modern technology while preserving the value of manual craftsmanship. Some products are still made by hand because they require steps and attention that automation simply can’t fully replicate.
We also use a live starter culture on an automated production line — a rarity in the industry — to achieve the distinctive quality and flavour people recognise. This combination of modern technology and a thoughtful, hands-on approach allows us to keep improving and to develop solutions others may find challenging, but which for us are part of everyday work.
