Have you ever heard of pinsa? It is the predecessor of pizza, a traditional Italian dish that was prepared in ancient Rome. The word pinsa comes from the Latin word "pinsere" which means to stretch or spread. Pinsa resembles focaccia in appearance, is oval in shape and is characterized by the fact that, unlike pizza dough, this dough is pressed with the hands until the desired shape is obtained. Pinsa base is lighter than pizza, soft in the middle with crispy edges.
In the past, pinsa was made from a mixture of different flour and water, with additions such as rosemary, olive oil and salt. Today's pinsa, which is gaining more and more popularity outside of Italy, is actually a modern version of that old dish, with new ingredients and methods of preparation. The main difference compared to other similar dishes, except for the flour mixture, is the long rising time of the dough, which is kept in the refrigerator before handling, and is therefore lighter and more airy.
