The end of summer and the beginning of autumn is the season when squash is on the menu, a food favorite to many people! At Pan-pek, we use it to make a delicious squash and cheese strudel called bučnica, which we do manually - from pulling the dough, preparing the filling, rolling it into a strudel shape, and baking.
Although it is most often prepared in the north parts of Croatia, this salty strudel stuffed with cheese and grated squash is a favorite delicacy in all parts of the country and beyond. You can make an effort and prepare it yourself, or you can resort to a little trick and buy a delicious bučnica, made by hand and baked to perfection, just like our grandmothers used to do, at the nearest Pan-Pek store.
Why is our bučnica so special? The secret is in the way we make it.
The dough (made from flour, water, oil, eggs, salt) is kneaded and manually divided into smaller pieces that are coated with oil and then put to rest for a while.
On a table covered with a tablecloth, the dough is then manually stretched to the required size. A filling is applied by hand to the ends of the dough (made from fresh cheese, squash, sour cream, oil, eggs... ), then a piece of dough is placed over the filling, also by hand and the end of the dough is finally rolled up with a use of tablecloth.
The resulting "rolls" are cut into pieces, manually put to a baking sheet, coated with sour cream, and our bučnica is ready to be baked and served.
